Situated on the red volcanic slopes of the Aberdare Mountains in Kiambu, Kenya, is the Gitwe Cooperative Society of Farmers. 900 smallholder farmers, each with an average of 150 coffee trees, deliver their ripe cherries to the Karatu Coffee Factory. This lot is made up exclusively of the peaberries, or the tiniest beans from the harvest. Peaberries are simply a rare mutation of the coffee seed inside the cherry that happens when only one seed develops in the cherry, instead of two.
