Coffee Details
The mysterious Pink Bourbon varietal first appeared in the Huila region of Colombia, and was originally thought to be a hybrid of yellow and red bourbon. Recent DNA testing has proven it's closer to an Ethiopia landrace varietal, or Panamanian Geisha, which makes sense when you taste the sweet and delicate flavor profile.
We partnered with Azahar coffee to bring you this lot, consisting of several Pink Bourbon micro-lots from the Acevedo and Pitalito municipalities. The cherries were treated to a prolonged, two-step fermentation that consisted of fermenting the cherry intact for 42 hours, then de-pulping and further fermenting in a tank for 96 hours. The coffee was then rinsed and dried utilizing another two-step multi-system drug process for 15-20 days.
